Description
A dissertation on the history and contemporary production of oatcakes in Yorkshire and Lancashire. The first of five chapters considers the distribution of oatcakes, with sections on climate and the farming economy, types of oatcake and their distribution in the two counties, the dialectal distribution of terms for these types, and types of oatcake in neighbouring counties. Chapter Two outlines the history of the oatcake, with sections on origins and links with Scandinavia, their place in the diet, from home baking to commercial baking, and the Havercake Lads. Chapter Three describes the methods of baking, and includes examples of four different methods used, followed by descriptions of the utensils and ingredients used. Chapter Four considers hot plate bakers, whilst the final chapter presents a number of oatcake recipes. Appendices include a glossary of related terms.
The dissertation also includes photographs of the bakehouse of an oatcake maker in Nelson, Lancashire, his baking equipment and the stages in the making of an oatcake.
