Description

Side 1 recording in Pateley Bridge. Side 2 recording in Horton-in-Ribblesdale. [Side 1] Mrs. Hesselden talks about baking bread, lists ingredients incl. flour, 'lile' [= little] bit of yeast and lard, milk and water, gives instructions incl 'sprankle' [= sprinkle] salt and stir to make dough, grease tin and place dough in tin, allow dough to rise then put in 'het' [= hot] oven, ensure oven is not 'over' [= too] hot or bread will 'kizzen' [= burn, go dry], remove from tin and cover with 'clout' [= cloth] to cool. [Side 2] Dick talks about family farm, explains how to 'stick' [= slaughter] pig with 'whittle' [= knife], remove insides and 'hing' [= to hang] carcass overnight prior to salting.

Mrs. Hesselden b. Pateley Bridge, aged 70, school at Beverley till aged 13, whole life in Pateley Bridge; husband b. Halifax, farmer. Dick b. Horton-in-Ribblesdale, aged 64, local school till aged 13, whole life in Horton-in-Ribblesdale; father b. Horton-in-Ribblesdale; grandfather b. Horton-in-Ribblesdale.
