Description
[Side 1] Charlie describes process of killing and salting pig, points out hook in house for hanging pig, lists cuts of meat, incl. 'pig's fry' [= entrails of slaughtered pig], hams, shoulders, 'chine' [= backbone and immediately adjoining flesh of bacon-pig]. [Side 2] Charlie talks about long hours and low wages as young farm worker in past, recalls local pig killer often slaughtered pig while drunk. Note: Recording date 1952-01-09 noted by ear, 1951-01-16 written on lacquer disc label.

Charlie b. Keelby, aged 72, local school till aged 12, whole life in Keelby.
