Gerald Clifton, recorded in Moreton-in-Marsh [continued from tape LAVC/SRE/A715r]; talks about the displaying of meat in a butcher's shop; shop fixtures and fittings; the refrigeration of meat; butchers' clothing; the names for people associated with the meat trade; words for meat processing; shop hygiene; making lard; pricing; serving. [Tr. 1]
Brian Hartshorne, recorded at home in Wolverhampton; gives answers to the collector's questionnaire concerning language and terminology associated with the butchering trade. Questions relate to beef, lamb, pork and poultry, and the answers include the names given to animals of differing ages, meat cut terms, terminology for slaughtering and slaughtering methods. [Tr. 1].
