Description
[Collector announcement]; Raymond Lindley and his wife [possibly recorded in Spondon, on the outskirts of Derby] give answers to the collector's questionnaire concerning language and terminology associated with the butchering trade. Questions relate to beef, lamb, pork and poultry, and the answers include the names given to animals of differing ages, meat cut terms, terminology for slaughtering, descriptions of slaughtering methods, the processing and preparation of carcasses, machinery and equipment, meat contamination and pests. The collector refers to numbered diagrams, to elicit answers concerning meat cut terms.
The interview also includes reference to meat imported from Argentina during World War Two; anecdotes regarding the driving of cattle to market in Derby; cleaning the shop; butchers' work during World War Two; meat prices; making brawn; and Christmas trade. Continues on tape LAVC/SRE/A706r.
