Description

Male informant gives answers to the collector's questionnaire concerning language and terminology associated with the butchering trade. Questions relate to beef, lamb, pork and poultry, and the answers include the names given to animals of differing ages, meat cut terms, terminology for slaughtering, descriptions of (old and new) slaughtering methods, the processing and preparation of carcasses, machinery and equipment, meat contamination and pests, offal, blood products and other by-products; game animals; storing and preserving meat. The collector refers to numbered diagrams, to elicit answers concerning meat cut terms.
