Description

[Collector announcement]; Ivy Simmons [Simmonds?], recorded with her husband [?at home in Tamworth]; answers questions about names given to pig meat, making brawn and pickling; names for chickens, turkeys, ducks and geese - killing and preparation of these birds; slaughtering - names for areas, implements used, hygiene, internal organs [husband contributes at times], sausages and blood products; informant's biographical details, and talk of her butchering career. [Tr. 2]


Further talk of butchering implements, the cutting and presentation of meat, shop fixtures and fittings, cooking meat, meat storage (describes the use of ice before fridges, and collecting ice from Birmingham in a pony and trap); the passing on of butchering skills/knowledge; customer relations; meat curing; butchers' clothing; names for people working in the meat trade; names given to the jobs of processing and preparing meat.
