Description

Collector's father gives answers to the collector's questionnaire concerning language and terminology associated with the butchering trade. Questions relate to beef, lamb, pork and poultry, and the answers include the names given to animals of differing ages, meat cut terms, terminology for slaughtering, slaughterhouses and slaughtering methods. The collector refers to numbered diagrams, to elicit answers concerning meat cut terms. Interview continues on tapes LAVC/SRE/A540r and LAVC/SRE/A541r.
