First published in French under title: "De l'usage du caphé, du thé, et du chocolate", Lyon 1671. "La première partie de cet ouvrage est traduite du traité de Naironi sur le café; la seconde est extraite du P. Alexandre de Rhodes, de Nieuhoff; la troisième est une réimpression de la traduction par René Moreau de l'ouvrage de Antoine Colmenero." Nouvel le biographie générale, t. 15, col. 68 sub Dufour, Philippe Sylvestre, to whom it ascribes the work.
Sometimes attrbuted to Jacob Spon. It is probable that the original was compiled by Dufour and was translated by Spon. Cf. Vicaire. Bibliographie gastronomique, col. 193-196; and Haag, La France protestante, t. IV, p. 378, and t. IX, p. 314.
"Dialogus de chocolata" is from the Spanish of Bartolomeo Marradon.
